New Year's Eve

HAPPY NEW YEARS!!!  I can't believe that today is the very last day of 2010!!  Less than 12 hours away and then we'll be ringing in the New year!!  I have my resolutions..I don't usually make any but this year I have decided that some changes will be forthcoming.  Resolution #1...I AM GOING TO LOSE WEIGHT!! No I'm not yelling at you!! I'm yelling it to the world...which leads me to resolution #2- I AM GOING TO START EXERCISING!! Again- not yelling at you still yelling it to the world. Resolution #3... I am going to continue to eat healthier by cooking more from scratch and less convenience processed food. See I'm not yelling anymore as this is really a continuation to what I have already started. I even made chewy granola bars from scratch with Tay (AKA Sweetpea)- her's were chocolate chip and mine were dried cranberry and cashew. Both...yummy. Although when following the recipe they we're holding together so I added extra honey which made it a lot sweet. So I came running to the computer and googled Chewy granola bar recipes to see what other recipes used for a binder-  and ran back and added an egg to both recipes and voila...we have super yummy and amazingly easy granola bars.  TADA!!  :D Wish I could remember where I got my recipe from just want to say thanks and see if I messed something up that worked out anyways.

Went to see Tangled with Tay today- It was so cute and of course I teared up during the mushy parts but that's just me. Give me a mushy part and I'll give you tears and a quiet sniff!!

Ok- so enough for now just wanted to get my resolutions (aka goals) fgor 2011 out there in cyber world- nothing like some accountability. I've still gotta vacuum for the clean house for the new year (just don't look in my shower cause I'm not doing that today- maybe tomorrow).

Have a Prosperous, Healthy, and Happy New Year! And by all means...Be Safe!!!

~Jo

Just an afterthought...did you notice all my resolutions have a common theme???

The day after...

Wow...it's the day after Christmas!  My house is trashed- there are toys everywhere in the living room. Tay has decided that since she has a whole year till next Christmas and since she got her littlest pet shops she can start sucking her thumb again...AARGH!!!  I took one of the LPS back tonight. We'll see what happens.

Tay cooked dinner tonight from her new cookbook (fix it and forget it-the one for kids) she was so excited. Unfortunately I oopsed and didn't read the directions very week and missed the cook on high and then turn down part of the directions. I only saw the cook 2 1/2-3 hours part. It was ready about 8 tonight- by then she had already eaten. It's all good. I had some she had a tiny bit- tomorrow is another day and it's in the fridge. Was really yummy though.

Made the menu this morning...
Sunday- Cheesy egg and broccoli casserole
Monday- Cracker Barrel and then to see the lights at the Morman Temple with mom
Tuesday- burgers and waffle fries and corn- gonna use the Northwoods seasoning that mom says is YUM
Wednesday- tortellini with Spaghetti sauce that Tay is making from the cookbook in the crockpot
Thursday- Creamy lasagna from same cookbook
Friday-NEW YEARS EVE- homemade calzones and cheesy artichoke dip with chips
Saturday- Leftovers/scrounge

My New Years Eve resolution is to lose weight. I'm going to be doing Weight Watchers with a co-worker. I have have have to do this. I'm not comfortable with myself and tired of needing to get new clothes -ok I only bought the one pair of pants but that's enough!!!! It's just time for some changes!! Now I just have to get the new materials and restart my online stuff. Oh where oh where did my skinny self go???  LOL!

Ok I'm off to play some flingsmash on the wii!  Nite all!

Time off

Ahhhhhh...I'm officially off until next year...can youbelieve Christmas is only 2 days away and 2011 is9 days away??? Where has this year gone??? Wow!

Tomorrow SweetPea and I are going to bake cookies for Santa and do some wrapping!  Yea!! Of course I can't wrap hers until she goes to bed so maybe I'll start that tonight. What an amazing idea...now will I actually start it or wait till Christmas Eve like I normally do. We are having a smaller Christmas this year. Lots and Lots is just not in the budget this year. Well never actually has been-I was just good this year and stuck to my budget. Feels good. And besides- between what I have for SweetPea and what her dad sent and grandpa and grandma and grammy and of course SANTA she will still make out like a bandit. Can't wait to have tacos for our Christmas dinner and a day of Wii  :D

Strayed from the menu this week but still cooked so I can't complain. Made this roast from the Jan 11 issue of AllYou-- it's absolutely AMAZING!! definitely a keeper!! Might be having it for dinner tonight too over brown rice and a vege. Sounds Yummy!

I used the Blockbuster Express freebie code today and we rented Ramona and Beezus for kiddo. She's really excited. As soon as she's done making "Candy Land" we'll watch it. It's gonna be so much fun to spend so much time with her these next days. She's going to daycare on monday and thursday  half days next week so we can both keep our sanity but otherwise she's gonna be home with me. We're planning some outings with Grammy so that will be fun and will help keep her from going stircrazy. We're going to go see the lights at the Morman church, see a movie or two, mabe check out some of the small museums in Mesa. Other plans for my vacation include catching up on the recorded shows on the DVR, making bagels, cooking alot, maybe some cleaning out of some clutter (SP's toys and my closet), getting through the masses of magazines I have, cleaning house, and of course sitting on my ass!  LOL!

I'm gonna go check on SweetPea and see if she's done. I'm ready to snuggle and watch a movie.

TTYL!!

Kiddo Free

Well here I am all alone. SweetPea is at Mom's for the night and tomorrow they are going shopping for..well.. me!  And it save me on daycare too! Double bonus!  LOL!

It's been a busy couple of days. Yesterday Mom, SweetPea, and I went to drop off ornaments to Jerry and Larry (Jerry has been cutting our hair for the past 7 years and Larry is his brother who cuts my stepdad's hair) and then we picked up our Angel Food box and then we went to the Gilbert Farmer's Market. Ok maybe it's just me but all the farmer's markets I;ve been to have had tons of produce...Not this one- there was one man who was selling lettuce---absolutely BEAUTIFUL lettuce- but it was $5 a head... sorry not in my budget for lettuce, but oh how I wanted to get one to try. He also had radishes and sweet potatoes. all speciman produce (I'm gonna have to look that up), there was a tamale lady selling her goods for $2.50 for 1/ $13 for 6/ $26 for 12....holy cannoli batman!!  we got 1 each to have for lunch- mom got the regular shredded pork and I got Southwestern chicken with black beans and corn and cheese... AMAZING!!  SweetPea got my kind after trying it. So mom and I closed our eyes and bought 6 to share all while gasping and choking at the price.... but they were oh so good!!  Oh yea, I bought fresh eggs too for $5 a dozen- don't know why that didn't seem to phase me but it didn't and they are so so pretty- white and brown and green eggs. Now if only the inside was green too...  Then we went to Costco for trash bags...$80 later (only $20 was mine) I pulled my back moving a case of water over in the trunk- not lifting the damn things- sliding one 4 friggin inches!!  So now I'm taking Ibuprofen and using generic Ben Gay without the smell. Anyway it was a good day. we had fun and saw some interesting things for sale.

Today I made chicken stroganoff and took that to Mom's for dinner. I have enough for another meal too. I also made our menu for the week...

Sunday: Chicken stroganoff with broccoli salad
Monday: Fettucini Alfredo with meatballs
Tuesday: Chicken Tender Salad
Wednesday: Burgers (probably beef) with waffle fries (we got a 5 lb bag in the box)
Thursday: Au Gratin Potatoes with hotdogs and Mixed veges
Friday: Leftovers of some sort
Saturday: Tacos---yes you read right..tacos on Christmas...we had our traditional meal for         Thanksgiving so now we're having fun. And since my stepdad is going back east for Christmas we're gonna go see a movie too.

Let's see what else has been going on...I worked OT everyday last week. It'll help make up for the furlough this week and a little extra too. Our furlough is Thursday and our paid holiday is on Friday and my vacation starts on the 27th...not bad 11 days off and I'm only using 32 hours of annual leave. Wahoo!!

I had to buy some pants the other day and I have just one thing to say to all the manufacturers out there...Just because the size of the butt gets bigger does NOT mean the legs get longer!!! Why do they think larger women are of Amazon height????? Ok there's my rant for the day. After the new year things are going to be changing...for the smaller!!  :D

Ok- that's it for now... Nite all!

Eggshells

Well it's almost happy happy wednesday!!  Yay!! Christmas is coming way too fast. I'm really almost done so I can't complain. Have to wrap dad and chris's tonite and mail it tomorrow. h joy... big question is do I go out at lunch and hope for a fast line and a parking spot when i get back to work or do I wait till after work( and ot)...probaby lunch. we'll see.

I have a friend who is going through some very intense tough life changing "crazy" as she puts it. I feel like I'm walking on eggshell all the time, I never know when she's going to get mad or upset or "into a rage". But I know she'll get through this and I'm there for her 100%!  No matter how long it takes!

Found out from the dr today that they have to change my thryoid med to a lower dosage as my levels are too high!  so tomorrow I start taking a lower dosage and go back for labs in 2 months. yay. Hopefully things will level out. Either way it is what it is.

Ok- short one tonight. I'm pooped and ready to sit and probably crash! Nite!

today

Today I woke up at 9- absolutely amazing with my SweetPea around...she's usually trying to wake me up by 7- 730 on a really good day!  Lol!  And since I woke up it's been a lazy day with a couple of mini naps involved. We did make 2 minute fudge for SweetPea's teacher. So easy and perfect for her to make. We melted a 12 oz bag of mini chocolate chips and a can of chocolate frosting and mixed in chopped cashews and mini marshmallows. YUM!!  She's so excited!

I made our menu for next week. As far as I know there's OT at work next week everyday so I tried to keep it simple.

Sunday: homemade chicken pockets (from www.kevinandamanda.com) and salad
*update- I loved these, SweetPea- ehh. I think i could change it up a bit and she'll love 'em. I'm thinking some salsa might give it a bit more zing (i added black olives and one scallion- not enough).
Monday: Individual  Taco Pizzas (www.5dollardinners.com) and spanish rice

Tuesday: Taco salad (made with the leftover meat mix from Monday)
Wednesday: Stirfry mix that's in the freezer
Thursday: Tomato soup with grilled cheese (per SweetPea's request)
Friday: homemade chicken flavored rice (like Rice-a Roni) with smoked sausage and a vege
Saturday: scrounge

I've been trying to clear out the freezer because next saturday we pick up our box from Angel Food Ministries. Huge amount of food for not a huge amount of $$. Last's us all month.

Guess I should get laundry started and take a shower...see, I told you it's a totally lazy day!

Have a great week!

My Bibble is my world...

So Here I am...in completely unknown territory. I have decided to start a blog. I have no particular plan for this blog right now. It will be a work in progress I guess.

So let me start by explaining that according to my friends I am the naive one. I grew up pretty well protected- I did ok in school, stayed out of trouble, was quiet and shy. I grew up in a bubble. And as I've grown my bubble has gotten a small leak and has started to shrink. So now I live in a bibble. Lol.

ok now the basics...I am a single mom to the bestest 7 (and a half) year old that I'm gonna just call SweetPea. She's my life. Pretty simple. It's just her and I.  Umm. I'm 39 and I have quite a few months until I hit the big 40. YAY! Ok not really a big deal but we'll see what happens closer to. I grew up a Navy brat so I've seen different places and have wonderful memories from that and then lived in Cali for 10 years and NH for 13 years and am now living in AZ these last 7 years (and dry heat or not....It's HOT!!). So that's basically it.

It's time to make some changes in our life. Eating better, have to start exercising, losing some weight... I want to become a better person both physically and mentally. I've decided that I have to take care of my self and in doing that SweetPea will learn the same. Lead by example I guess. So this blog will give  me some accountability.

Ok, It's late and I'm starting to babble and babble some more so tonight is over. I'm going to bed now. Nite all.
